Ingredients
- 100 g Sambar Onion Peeled
- 60G Primi Piatti Red Chilli Flakes
- 200 g Orange Carrot (Gajar)
- 1 pack (200 g) Tata Sampann Meethi Imli Khajur Chutney Dip | Made With Tamarind & Dates | Sweet & Tangy Flavour
- 250 g Organically Grown Green Capsicum
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 2.5 Kg Austin Whole Peeled Tomato
- 5 ltr Fortune Xpert Pro Immunity Oil Blend Of Rice Bran & Sunflower Oil
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pack (100 g) Popular Essentials Black Pepper
Instructions
- 1. Heat a large skillet over medium heat and add 1 tablespoon of oil. Add 1 diced onion and sauté until softened, about 3-4 minutes.
- 2. Add 1 diced green capsicum to the skillet and cook, stirring occasionally, until softened, about 6-8 minutes. Season with 1/4 teaspoon red pepper flakes, salt, and pepper to taste.
- 3. Stir in 1 tomato, 2 diced carrots, and 1/4 cup of chutney. Mix well, cover, and let simmer on low heat for 15 minutes.
- 4. Add 1/2 cup of diced green pepper to the skillet and cook uncovered over medium-high heat for 5 minutes, stirring occasionally, until the peppers are tender but still slightly crisp.
- 5. While the vegetables are cooking, prepare 2 cups of rice according to package instructions.
- 6. Serve the spiced vegetable mixture over the hot cooked rice. Enjoy your meal!
