Ingredients
- 250g Green Chilli
- - Vegetable Stock Cubes
- 20G Curry Leaves
- 250 ml Coconut Milk
- - Mustard Seeds
- 1 kg Jackfruit
- - Onion
- 250g Ginger
- 250g Garlic
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 50 g Cumin Powder
- 100g Garam Masala
- 10G Salt
- 250g Coriander
- 500 g Tomato - Hybrid
Instructions
- Step 1: Heat the oil in a large, deep pan. Add mustard seeds and let them splutter. Add the curry leaves and sauté for a few seconds.
- Step 2: Add the sliced onions and sauté until golden brown. Stir in the ginger, garlic, and green chilies, cooking until aromatic.
- Step 3: Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, and a pinch of salt. Cook until the tomatoes break down into a thick paste.
- Step 4: Add the jackfruit chunks and mix well to coat with the spice mixture. Cook for 5 minutes, stirring occasionally.
- Step 5: Stir in the rinsed broken wheat and pour in the coconut milk and vegetable stock. Mix thoroughly and bring it to a gentle boil.
- Step 6: Lower the heat, cover, and let it simmer for 20-25 minutes, or until the broken wheat is tender and the liquid is absorbed.
- Step 7: Sprinkle garam masala and fresh coriander leaves over the pilaf. Stir gently to combine.
- Step 8: Serve hot with a lemon wedge on the side.
