  • 250g Green Chilli
  • - Vegetable Stock Cubes
  • 20G Curry Leaves
  • 250 ml Coconut Milk
  • - Mustard Seeds
  • 1 kg Jackfruit
  • - Onion
  • 250g Ginger
  • 250g Garlic
  • 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 50 g Cumin Powder
  • 100g Garam Masala
  • 10G Salt
  • 250g Coriander
  • 500 g Tomato - Hybrid

Instructions

  1. Step 1: Heat the oil in a large, deep pan. Add mustard seeds and let them splutter. Add the curry leaves and sauté for a few seconds.
  2. Step 2: Add the sliced onions and sauté until golden brown. Stir in the ginger, garlic, and green chilies, cooking until aromatic.
  3. Step 3: Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, and a pinch of salt. Cook until the tomatoes break down into a thick paste.
  4. Step 4: Add the jackfruit chunks and mix well to coat with the spice mixture. Cook for 5 minutes, stirring occasionally.
  5. Step 5: Stir in the rinsed broken wheat and pour in the coconut milk and vegetable stock. Mix thoroughly and bring it to a gentle boil.
  6. Step 6: Lower the heat, cover, and let it simmer for 20-25 minutes, or until the broken wheat is tender and the liquid is absorbed.
  7. Step 7: Sprinkle garam masala and fresh coriander leaves over the pilaf. Stir gently to combine.
  8. Step 8: Serve hot with a lemon wedge on the side.
