Ingredients
- 6 pcs White Eggs
- - Rice Flour
- 500G Loose Besan
- - Baby Tomatoes
- 250g Green Chilli
- 100 g Coriander Leaves
- 20 g Turmeric Powder
- - Red Chilli
- 50 g Cumin Powder
- 100 g Salt
- 200 ml Mustard Oil
Instructions
- 1. Mix rice flour and chickpea flour with water to create a smooth batter for flatbreads.
- 2. Heat a non-stick pan and pour a thin layer of batter to make soft flatbreads; cook on both sides.
- 3. Whisk eggs with turmeric, red chili powder, cumin powder, salt, and ginger-garlic paste.
- 4. Heat oil in a pan, pour whisked eggs, and scramble lightly until cooked through.
- 5. Finely chop onions, tomatoes, green chilies, and coriander leaves for the filling.
- 6. Sauté onions, tomatoes, and green chilies in oil until soft and aromatic.
- 7. Add the cooked scrambled eggs to the sautéed mixture and stir well to combine.
- 8. Lay each flatbread on a plate and evenly spoon the egg filling onto it.
- 9. Sprinkle fresh coriander leaves over the filling for added freshness and flavor.
- 10. Roll the flatbread tightly around the filling to create kathi rolls.
- 11. Serve warm with a side of mint chutney or tomato ketchup if desired.
