Ingredients
- 1 ltr Bertolli Extra Virgin Olive Oil
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 400 g Zehrat Safa Tomato Paste, 4
- 500 gm Freshos White Quinoa
- 1 kg Akar Powder Salt
- 100 g X 3 Mtr Turmeric Powder | Arisina Pudi Combo
- 100 g X 3 Mtr Coriander Powder Combo
- 1 pack (100 g) Popular Essentials Black Pepper
Instructions
- 1. Heat 2 tablespoons of olive oil in a small stockpot over medium heat. Add 1 finely chopped yellow onion and sauté for about 7 minutes until softened.
- 2. Add 2 minced garlic cloves and cook for an additional 2 minutes, stirring frequently to prevent burning.
- 3. Stir in 1 tablespoon of tomato paste, 1 tablespoon of turmeric powder, 1/2 teaspoon of coriander powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 minute to toast the spices and blend the flavors.
- 4. Add 1 cup of rinsed quinoa to the pot and sauté for 2 minutes, ensuring the grains are well coated with the spice mixture.
- 5. Pour in 2 cups of vegetable broth and add 1 cup of chickpeas. Stir well, cover, and bring to a boil. Once boiling, reduce the heat to very low and simmer for about 18 minutes, stirring occasionally, until the quinoa has absorbed all the liquid.
- 6. Fluff the pilaf with a fork and serve warm as a wholesome dinner option.
