Instructions
- 1. Wash and soak the basmati rice in water for 20 minutes, then drain and set aside.
- 2. Marinate the chicken thighs with yogurt, turmeric powder, red chili powder, coriander powder, cumin powder, and rock salt for 15 minutes.
- 3. Heat vegetable oil in a large pan and add whole spices: cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté until fragrant.
- 4. Add sliced onions to the pan and cook until golden brown, stirring occasionally to avoid burning.
- 5. Stir in minced garlic, grated ginger, and chopped green chilies, cooking for 2 minutes to develop the flavors.
- 6. Add chopped tomatoes to the pan and cook until softened, forming a rich base for the biryani.
- 7. Incorporate the marinated chicken into the pan and cook until the chicken is seared and partially cooked, about 5 minutes.
- 8. Layer the drained rice over the chicken mixture, spreading it evenly and gently pressing down.
- 9. Pour water into the pan, ensuring the rice is submerged, then cover with a tight lid and cook on low heat.
