Spiced Almond Rice with Aromatic Herbs recipe

Ingredients

  • 80 g Chheda'S Tiramisu Almonds Dessert Bites
  • 100 g Sambar Onion Peeled
  • 100 g Garlic - Single Clove
  • 1000 g Japanese Choice Jasmine Ready To Cook Thai Rice
  • 4.6 ltr Saffola Active Refined Cooking Oil Blend Of Rice Bran & Soyabean Oil
  • 50 g Whole Farm Cardamom Powder
  • 40 g On1Y Ginger Powder
  • 100 g Zoff Red Chilli Powder
  • 45 g On1Y Cinnamon Powder
  • 100 g Jk Jeera Powder / Cumin Powder
  • 1 pack (25 g) Snapin Nutmeg Powder

Instructions

  1. 1. In a medium saucepan, heat 2 tablespoons of cooking oil over medium heat. Add 3 tablespoons of almonds and cook, stirring frequently, until they are golden brown. Remove the almonds with a slotted spoon and drain on paper towels.
  2. 2. In the same saucepan, add 1 finely chopped onion and 1 minced clove of garlic. Cook and stir over medium heat until the onion is tender but not browned, about 3-4 minutes.
  3. 3. Stir in 1 cup of uncooked jasmine rice, 1/4 teaspoon ground cardamom, 1/8 teaspoon ground ginger, 1/4 teaspoon ground red pepper, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cumin, and a pinch of ground nutmeg. Cook and stir for about 2 minutes, allowing the rice to lightly toast and absorb the spices.
  4. 4. Pour in 1 3/4 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes.
  5. 5. After 15 minutes, remove the saucepan from heat and let it stand, covered, for an additional 10 minutes to allow the rice to finish cooking and absorb any remaining liquid.
  6. 6. Fluff the rice with a fork and gently stir in the toasted almonds. Serve warm as a flavorful side dish or a light dinner option.
