Soya Masala Pulao with Crunchy Peanuts recipe

Ingredients

  • 80 g Soya Chunks
  • 1 kg Basmati Rice
  • 500 g Onion
  • - Baby Tomatoes
  • - Green Peas
  • 250 g Carrot
  • 100 g Jeera
  • - Bay Leaf
  • 20 g Turmeric Powder
  • - Red Chilli
  • 45 g Garam Masala
  • 100 g Salt
  • 200 ml Mustard Oil
  • - Coriander Powder

Instructions

  1. 1. Wash and soak basmati rice for 20 minutes, then drain the water.
  2. 2. Soak soya chunks in hot water for 10 minutes, squeeze out excess water, and set aside.
  3. 3. Heat oil in a large pan, add cumin seeds and bay leaf, and let them sizzle.
  4. 4. Add sliced onions and sauté until golden brown, stirring occasionally.
  5. 5. Add ginger-garlic paste and cook for 2 minutes until the raw aroma disappears.
  6. 6. Stir in chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft.
  7. 7. Add chopped carrots, green peas, and the prepared soya chunks, mixing everything well.
  8. 8. Sprinkle garam masala and cook for 3 minutes to blend the flavors.
  9. 9. Add the soaked rice and 300 ml of water, stirring gently to combine.
  10. 10. Cover the pan with a lid and cook on low heat for 15 minutes until the rice is fluffy and cooked.
  11. 11. Remove from heat and let it rest for 5 minutes with the lid still on.
  12. 12. Garnish with fresh coriander leaves and roasted peanuts before serving.
