Delicious kathi rolls filled with spiced soy chunks and fresh vegetables, wrapped in soft whole wheat parathas for a satisfying meal.
Ingredients
- 500 g Wheat Flour / Maida
- 250 g Cucumber
- 250 g Carrot
- 1 piece Yellow Bell Pepper
- 500 g Onion
- - Tomato Ketchup
- 100 g Coriander Leaves
- 400 g Curd
- 250 ml Lemon Juice Concentrate
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- 100 g Salt
- 100G Oleo
Instructions
- 1. Soak the soy chunks in hot water for 10 minutes and squeeze out excess water.
- 2. In a bowl, mix soy chunks with turmeric, chili powder, and garam masala.
- 3. Heat oil in a pan and sauté the marinated soy chunks for 5 minutes.
- 4. Grate carrot, slice cucumber, capsicum, onion, and tomato into thin strips.
- 5. Mix curd with lemon juice, salt, and chopped coriander leaves to make a tangy dressing.
- 6. Knead the whole wheat flour with water to make a soft dough and roll into thin parathas.
- 7. Cook each paratha on a hot griddle with a little oil until golden brown on both sides.
- 8. Place the cooked parathas on a plate and spread the curd dressing evenly.
- 9. Add sautéed soy chunks and fresh vegetables on top of the dressing.
- 10. Roll the parathas tightly into kathi rolls and secure with parchment paper or foil.
- 11. Serve the rolls warm with a side of mint chutney or ketchup.
