A flavorful and easy-to-make Jain-friendly pasta dish with a Southwestern twist, perfect for a satisfying dinner. This vegetarian recipe is packed with zesty lime, fresh cilantro, and a hint of spice.
Ingredients
- 1 Bunch x 2 Coriander Leaves ( Kottambari Soppu )
- 400 g Pastallio Multi-Millet Pasta
- 50 g On1Y Black Peppercorns With Grinder
- 2.5 Kg Austin Whole Peeled Tomato
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 80 g Urban Platter Cayenne Pepper Powder
Instructions
- 1. Cook your preferred pasta according to the package instructions until al dente. Drain and set aside.
- 2. In a large mixing bowl, combine 1 tsp lemon juice, 1 tsp finely chopped coriander leaves, 1/8 tsp cayenne pepper, and a pinch of black pepper. Mix well.
- 3. Add the cooked pasta to the bowl and toss thoroughly to coat the pasta evenly with the lemon-cilantro mixture.
- 4. Sprinkle a small amount of finely ground black pepper over the pasta for added flavor. Mix gently to combine.
- 5. Chop 1 fresh tomato into small pieces and use it to garnish the pasta before serving.
