Ingredients
- 200 ml Coconut Milk
- 1 kg Rice
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- 20 g Turmeric Powder
- - Red Chilli
- - Coriander Powder
- 100 g Garlic
- loose Ginger
- 500 g Onion
- 250g Green Chilli
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Wash the rice thoroughly and soak it for 10 minutes.
- 2. Heat 1 tbsp oil in a pan, add mustard seeds and curry leaves, and let them splutter.
- 3. Add chopped onion, garlic, ginger, and green chilies, and sauté until golden brown.
- 4. Mix turmeric, red chili powder, coriander powder, and tamarind pulp into the pan and stir well.
- 5. Pour in coconut milk and water, season with salt, and bring it to a gentle simmer.
- 6. Add fish fillets to the curry base and cook for 8-10 minutes until tender.
- 7. In a separate pot, cook the soaked rice with 1 cup water and a pinch of salt.
- 8. Once the rice is cooked, fluff it with a fork and mix in a splash of coconut milk for creaminess.
- 9. Serve the fish curry alongside the coconut rice while warm.
