South Indian Fish Curry with Coconut Rice recipe

Ingredients

  • 200 ml Coconut Milk
  • 1 kg Rice
  • 100 g Yellow Mustard Seeds
  • 100 g Curry Leaves
  • 20 g Turmeric Powder
  • - Red Chilli
  • - Coriander Powder
  • 100 g Garlic
  • loose Ginger
  • 500 g Onion
  • 250g Green Chilli
  • 100 g Salt
  • 1pc Watermelon

Instructions

  1. 1. Wash the rice thoroughly and soak it for 10 minutes.
  2. 2. Heat 1 tbsp oil in a pan, add mustard seeds and curry leaves, and let them splutter.
  3. 3. Add chopped onion, garlic, ginger, and green chilies, and sauté until golden brown.
  4. 4. Mix turmeric, red chili powder, coriander powder, and tamarind pulp into the pan and stir well.
  5. 5. Pour in coconut milk and water, season with salt, and bring it to a gentle simmer.
  6. 6. Add fish fillets to the curry base and cook for 8-10 minutes until tender.
  7. 7. In a separate pot, cook the soaked rice with 1 cup water and a pinch of salt.
  8. 8. Once the rice is cooked, fluff it with a fork and mix in a splash of coconut milk for creaminess.
  9. 9. Serve the fish curry alongside the coconut rice while warm.
