Ingredients

  • 100 g Coriander Leaves
  • 200Ml Kara Coconut Milk Classic (200ml)
  • 100 g Garlic
  • medium Chilli Green Long
  • 200 g Kokam Black
  • 200 g Table Salt

Instructions

  1. 1. Soak about 8-10 pieces of kokum in a cup of warm water for about 20-30 minutes until they soften and release their color.
  2. 2. After the kokum is soaked, squeeze them gently to extract more flavor. Discard the kokum pieces and keep the water.
  3. 3. In a blender, combine fresh coconut along with a cup of water and blend until smooth.
  4. 4. Strain the coconut mixture through a fine mesh sieve or cheesecloth into a bowl to extract the coconut milk.
  5. 5. In a small blender jar, add 2-3 green chillies (adjust as per taste), garlic cloves, and a handful of coriander leaves. Blend to make a smooth paste.
  6. 6. Mix the kokum water, coconut milk, and the chili-garlic-coriander paste in a large bowl. Stir well to combine.
  7. 7. Add table salt to taste. Stir until the salt is completely dissolved.
  8. 8. Chill the Sol Kadhi in the refrigerator for at least an hour before serving to allow the flavors to meld together.
  9. 9. Serve Sol Kadhi cold, garnished with a few chopped coriander leaves.
