Ingredients

  • 6 pcs White Eggs
  • - Baby Tomatoes
  • 125 ml Flavoured Yogurt Drink - Mango
  • 50 g Cumin Powder
  • - Red Chilli
  • 20 g Turmeric Powder
  • 45 g Garam Masala
  • 200 ml Mustard Oil
  • - Coriander Powder
  • 100 g Salt
  • 1pc Watermelon

Instructions

  1. 1. Boil the eggs until hard-boiled, peel, and set aside.
  2. 2. Heat mustard oil in a pan until it begins to smoke lightly.
  3. 3. Add chopped onions and sauté until golden brown and fragrant.
  4. 4. Stir in ginger-garlic paste and cook for 2 minutes until aromatic.
  5. 5. Add chopped tomatoes and cook until the mixture turns soft and pulpy.
  6. 6. Mix in the yogurt along with coriander, cumin, chili powder, turmeric, and garam masala.
  7. 7. Cook the spice mixture for 5 minutes, stirring frequently to avoid sticking.
  8. 8. Add water to the pan and simmer the curry base for 5 minutes.
  9. 9. Gently score the boiled eggs and add them to the curry.
  10. 10. Simmer for another 5 minutes, ensuring the eggs absorb the flavors.
  11. 11. Garnish with freshly chopped coriander leaves before serving.
  12. 12. Serve hot with jeera rice or parathas for a wholesome meal.
