Ingredients
- 50 g Basil
- 100 g Sambar Onion Peeled
- 400 g Pastazara Finely Chopped Tomatoes
- 125 g Red Bell Pepper
- 100 g Garlic - Single Clove
- 5Ltr Vittorio Pomace Olive Oil
- 1 kg Supreme Harvest Iodized Salt
- 1 pc (50 g) On1Y Pepper Grinder
Instructions
- 1. Preheat your oven to 425°F (220°C). Line a 15x10x1-inch baking pan with foil and coat the foil with cooking spray.
- 2. Place 1 cup chopped sambar onions, 4 halved tomatoes, 1 sliced sweet red pepper, and 4 peeled garlic cloves on the prepared pan. Drizzle with 1/4 cup olive oil and toss to coat evenly.
- 3. Bake the vegetables uncovered for 40-45 minutes, stirring occasionally, until they are tender and browned.
- 4. In a large saucepan, combine 1/2 cup chopped fresh basil, 1/4 teaspoon salt, 1/4 teaspoon pepper, and the roasted vegetables. Bring the mixture to a boil over medium heat.
- 5. Reduce the heat and simmer uncovered for 20-25 minutes. Allow the soup to cool slightly.
- 6. Using a blender, process the soup in batches until smooth. Return the blended soup to the saucepan and heat through.
- 7. Serve the bisque hot, garnished with fresh basil leaves if desired.
