Ingredients

  • 500 g Onion
  • 250g Green Chilli
  • 125 ml Flavoured Yogurt Drink - Mango
  • 250 ml Lemon Juice Concentrate
  • 200 g Nandus Mutton Mince
  • 200 ml Sesame Oil
  • - Coriander Powder
  • 50 g Cumin Powder
  • 100 g Salt

  • 1 l Soyabean Oil

Instructions

  1. 1. Finely chop the onion, coriander, and green chilies, and set them aside.
  2. 2. In a large bowl, mix mutton mince with onion, ginger-garlic paste, chopped coriander, green chilies, and dry spices.
  3. 3. Knead the mixture for 5-7 minutes to ensure even distribution of spices and a tender texture.
  4. 4. Shape the mixture into long cylindrical kebabs around skewers or thin sticks.
  5. 5. Heat a grill pan or tandoor and lightly brush it with vegetable oil to prevent sticking.
  6. 6. Cook the kebabs on medium heat, turning occasionally, until evenly charred and cooked through (about 15 minutes).
  7. 7. For the chutney, blend mint leaves, yogurt, lemon juice, and a pinch of salt until smooth.
  8. 8. Serve the hot kebabs with the chilled mint chutney on the side.
