Ingredients
- 80 g Soya Chunks
- 1 Bunch Mint Leaves
- 500 g Onion
- 100 g Garlic
- loose Ginger
- 250 ml Lemon Juice Concentrate
- 1 kg Rice
- 100 g Coriander Leaves
- 200 ml Coconut Milk
- 20 g Turmeric Powder
- 50 g Cumin Powder
- 100 g Salt
- 1 ltr Pansari Tilsari Edible Vegetable Oil
Instructions
- 1. Boil the soy chunks in salted water for 10 minutes, then drain and squeeze out excess water.
- 2. Prepare a marinade by blending garlic, ginger, turmeric powder, chili powder, cumin powder, lemon juice, and 1 tbsp oil.
- 3. Coat the soy chunks in the marinade and let them rest for 20 minutes to absorb flavors.
- 4. Meanwhile, wash the rice thoroughly and set aside to soak for 15 minutes.
- 5. Heat 1 tbsp oil in a pot, sauté chopped onions until golden, then add mint and coriander leaves.
- 6. Add the soaked rice, coconut milk, and 1½ cups water, cooking it on low heat until fully done.
- 7. Thread the marinated soy chunks onto skewers and grill them on a stovetop grill or pan until charred and smoky.
- 8. Serve the skewers alongside the mint rice, garnished with fresh coriander leaves.
