Smoky Grilled Soy Chunk Skewers with Mint Rice recipe

Ingredients

  • 80 g Soya Chunks
  • 1 Bunch Mint Leaves
  • 500 g Onion
  • 100 g Garlic
  • loose Ginger
  • 250 ml Lemon Juice Concentrate
  • 1 kg Rice
  • 100 g Coriander Leaves
  • 200 ml Coconut Milk
  • 20 g Turmeric Powder
  • 50 g Cumin Powder
  • 100 g Salt
  • 1 ltr Pansari Tilsari Edible Vegetable Oil

Instructions

  1. 1. Boil the soy chunks in salted water for 10 minutes, then drain and squeeze out excess water.
  2. 2. Prepare a marinade by blending garlic, ginger, turmeric powder, chili powder, cumin powder, lemon juice, and 1 tbsp oil.
  3. 3. Coat the soy chunks in the marinade and let them rest for 20 minutes to absorb flavors.
  4. 4. Meanwhile, wash the rice thoroughly and set aside to soak for 15 minutes.
  5. 5. Heat 1 tbsp oil in a pot, sauté chopped onions until golden, then add mint and coriander leaves.
  6. 6. Add the soaked rice, coconut milk, and 1½ cups water, cooking it on low heat until fully done.
  7. 7. Thread the marinated soy chunks onto skewers and grill them on a stovetop grill or pan until charred and smoky.
  8. 8. Serve the skewers alongside the mint rice, garnished with fresh coriander leaves.
