  • 1 kg Basmati Rice
  • 250 g Mutton
  • 1 Bunch Mint Leaves
  • - Toned Milk
  • 100 g Almonds
  • 1 kg Quinoa
  • 200 g Dates
  • 100 Ml Govind Ghee
  • 100 g Raisins
  • - Green Cardamom Powder
  • 500 g Sugar
  • Pcs Saffron

Instructions

  1. 1. Wash and clean the mutton pieces thoroughly and pat dry with a kitchen towel.
  2. 2. Prepare the marinade by combining garlic paste, ginger paste, rock salt, red chili powder, turmeric, coriander powder, cumin powder, and lemon juice in a bowl.
  3. 3. Coat the mutton pieces evenly with the marinade, cover, and refrigerate for 1 hour to let the flavors soak in.
  4. 4. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  5. 5. Heat vegetable oil in a pan, sauté finely chopped onions until golden brown, and set aside half for garnish.
  6. 6. Add soaked rice, mint leaves, and green chilies to the pan with onions, and pour in 400 ml of water.
  7. 7. Season the rice with rock salt, cover the pan, and cook on low heat until the rice is fully cooked and fluffy.
  8. 8. Thread the marinated mutton pieces onto skewers and grill them over medium heat until evenly cooked and slightly charred.
  9. 9. Place a small piece of charcoal in a heatproof bowl, ignite it until red-hot, and place it inside the skewers’ grilling tray.
