Ingredients
- - DELI QUINOA/BASMATI RICE 1KG
- 500 g Whole Farm Premium Kabuli Chana (Big Size)
- - Frozen Mixed Vegetables
- - Cumin Seed
- 750 g Priya Sunflower Oil
- 500 g Onion
- 110 g Unpeeled Garlic Cloves
- 1 kg Beetroot
- 100 g Catch Super Garam Masala
- 25 g Whole Black Pepper
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Wash the rice thoroughly and soak it in water for 10 minutes.
- 2. Heat 1 tbsp of cooking oil in a pan and add cumin seeds; let them sizzle for 30 seconds.
- 3. Add the soaked rice to the pan along with 200 ml of water and 0.5 tsp salt. Cover and cook until rice is fluffy.
- 4. In a separate pan, heat 1 tbsp of cooking oil and sauté finely chopped onion until golden brown.
- 5. Add minced garlic and fresh turmeric to the pan and cook for 1 minute to release their aroma.
- 6. Stir in the frozen mixed vegetables and cook for 5 minutes on medium heat, stirring occasionally.
- 7. Add cooked chickpeas, garam masala, black pepper, and 0.5 tsp salt to the pan and mix well.
- 8. Cook the stir-fry for an additional 5 minutes, ensuring the chickpeas are heated through and the spices are evenly coated.
- 9. Fluff the jeera rice with a fork and serve it on a plate alongside the smoky chickpea and vegetable stir-fry.
- 10. Garnish with fresh coriander leaves if desired and serve warm.
