Ingredients

  • 200 g Itc Master Chef Medium Prawns Peeled & Deveined (Frozen)
  • 1 pack (1 kg) 921 Everyday Long Grain Rice
  • 100 g Garlic
  • loose Ginger
  • 90 g Dark Soy Sauce
  • - Urban Platter Sichuan Peppercorns
  • 300 G Assorted Chilli Pepper Sb Shichimi Tougarashi
  • 1 bunch Spring Onion
  • 1 ltr Pansari Tilsari Edible Vegetable Oil
  • 100 g Salt

Instructions

  1. 1. Rinse the prawns under cold water and pat them dry with a paper towel.
  2. 2. Heat 1 tablespoon of oil in a pan and sauté the crushed Sichuan peppercorns for 30 seconds to release their aroma.
  3. 3. Add the prawns to the pan and stir-fry for 3-4 minutes until they turn pink and are cooked through.
  4. 4. Sprinkle the shichimi tougarashi spice over the prawns, toss well, and set them aside.
  5. 5. Rinse the rice under cold water until the water runs clear, then drain.
  6. 6. In a saucepan, heat the remaining oil and sauté the chopped garlic and grated ginger until fragrant.
  7. 7. Add the rinsed rice to the saucepan and stir to coat it with the oil and aromatics.
  8. 8. Pour in the water, add salt, and bring to a boil. Reduce the heat, cover, and simmer for 12-15 minutes until the rice is tender and water is absorbed.
  9. 9. Remove the rice from heat and let it rest for 5 minutes, then fluff it gently with a fork.
  10. 10. In a small bowl, mix the soy sauce with 1 tablespoon of water and drizzle it over the cooked prawns.
