Ingredients
- 200 g Itc Master Chef Medium Prawns Peeled & Deveined (Frozen)
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 100 g Garlic
- loose Ginger
- 90 g Dark Soy Sauce
- - Urban Platter Sichuan Peppercorns
- 300 G Assorted Chilli Pepper Sb Shichimi Tougarashi
- 1 bunch Spring Onion
- 1 ltr Pansari Tilsari Edible Vegetable Oil
- 100 g Salt
Instructions
- 1. Rinse the prawns under cold water and pat them dry with a paper towel.
- 2. Heat 1 tablespoon of oil in a pan and sauté the crushed Sichuan peppercorns for 30 seconds to release their aroma.
- 3. Add the prawns to the pan and stir-fry for 3-4 minutes until they turn pink and are cooked through.
- 4. Sprinkle the shichimi tougarashi spice over the prawns, toss well, and set them aside.
- 5. Rinse the rice under cold water until the water runs clear, then drain.
- 6. In a saucepan, heat the remaining oil and sauté the chopped garlic and grated ginger until fragrant.
- 7. Add the rinsed rice to the saucepan and stir to coat it with the oil and aromatics.
- 8. Pour in the water, add salt, and bring to a boil. Reduce the heat, cover, and simmer for 12-15 minutes until the rice is tender and water is absorbed.
- 9. Remove the rice from heat and let it rest for 5 minutes, then fluff it gently with a fork.
- 10. In a small bowl, mix the soy sauce with 1 tablespoon of water and drizzle it over the cooked prawns.
- 11. Serve the garlic rice on plates and top with the spicy Sichuan prawns.
- 12. Garnish with chopped spring onions and serve hot.
