  • 100 g Coriander Leaves
  • 100 g Garlic
  • 500 g Onion
  • 250 g Carrot
  • 50 g Honey
  • 250 g Cucumber
  • - Shiitake Mushrooms
  • 1 kg Quinoa
  • 200 g Table Salt
  • 500 Ml Champion Oil
  • 90 g Dark Soy Sauce

Instructions

  1. 1. Rinse 1 cup of quinoa thoroughly under cold water to remove any bitterness.
  2. 2. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat.
  3. 3. Once boiling, reduce the heat to low, cover the saucepan, and let the quinoa simmer for 15 minutes or until all the water is absorbed.
  4. 4. While the quinoa is cooking, clean 200 grams of shiitake mushrooms by wiping them with a damp cloth. Remove the stems and slice the caps into thin pieces.
  5. 5. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced shiitake mushrooms and sauté for 5-7 minutes until they are tender and slightly browned. Season with salt and pepper to taste.
  6. 6. In a small bowl, prepare the dressing by whisking together 3 tablespoons of olive oil, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of honey, and 1 minced garlic clove.
