Ingredients

  • 100 g Quinoa
  • 1 piece Yellow Bell Pepper
  • 200 ml Sesame Oil
  • 90 g Dark Soy Sauce
  • 250 g Spring Garlic
  • - Red Chilli
  • 1pc Watermelon

Instructions

  1. 1. Rinse the quinoa thoroughly under cold water and cook it in a pot with twice the amount of water until fluffy, about 15 minutes.
  2. 2. Heat sesame oil in a large wok or pan over medium heat and sauté the ginger and garlic for 1 minute until aromatic.
  3. 3. Add the prawns to the wok and cook for 4-5 minutes until they turn pink and are fully cooked through.
  4. 4. Remove the prawns from the wok and set aside, leaving the juices in the pan for the vegetables.
  5. 5. Toss in the broccoli, carrots, and bell peppers into the same wok, stirring for 5-7 minutes until tender but crisp.
  6. 6. Add soy sauce, lime juice, and red chili flakes to the vegetables, stirring to coat evenly.
  7. 7. Return the prawns to the wok and combine with the vegetables, allowing flavors to meld for 2 minutes.
  8. 8. Fold in the cooked quinoa and mix well, ensuring it absorbs the sauce and flavors.
  9. 9. Sprinkle chopped green onions over the stir-fry and cook for 1 more minute.
  10. 10. Serve the dish hot, garnished with a squeeze of lime if desired.
