Ingredients
- 100 g Quinoa
- 1 piece Yellow Bell Pepper
- 200 ml Sesame Oil
- 90 g Dark Soy Sauce
- 250 g Spring Garlic
- - Red Chilli
- 1pc Watermelon
Instructions
- 1. Rinse the quinoa thoroughly under cold water and cook it in a pot with twice the amount of water until fluffy, about 15 minutes.
- 2. Heat sesame oil in a large wok or pan over medium heat and sauté the ginger and garlic for 1 minute until aromatic.
- 3. Add the prawns to the wok and cook for 4-5 minutes until they turn pink and are fully cooked through.
- 4. Remove the prawns from the wok and set aside, leaving the juices in the pan for the vegetables.
- 5. Toss in the broccoli, carrots, and bell peppers into the same wok, stirring for 5-7 minutes until tender but crisp.
- 6. Add soy sauce, lime juice, and red chili flakes to the vegetables, stirring to coat evenly.
- 7. Return the prawns to the wok and combine with the vegetables, allowing flavors to meld for 2 minutes.
- 8. Fold in the cooked quinoa and mix well, ensuring it absorbs the sauce and flavors.
- 9. Sprinkle chopped green onions over the stir-fry and cook for 1 more minute.
- 10. Serve the dish hot, garnished with a squeeze of lime if desired.
