Ingredients
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 125 g White Shimeji Mushroom (Anabe)
- 125 g Red Bell Pepper
- 500 g Brinjal - Bharta (Bhartachi Vangi)
- 250 g Zucchini Green
- 400 g Pastazara Finely Chopped Tomatoes
- 16 g Orika Oregano
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
Instructions
- 1. In a large nonstick skillet, heat 1/2 tablespoon of vegetable oil over medium heat. Add 1 chopped onion, 2 minced garlic cloves, 8 sliced mushrooms, and 1 diced red pepper. Stir-fry for about 4 minutes until the vegetables are tender.
- 2. Using a slotted spoon, transfer the cooked vegetables to a side dish and set aside.
- 3. Heat the remaining 1/2 tablespoon of vegetable oil in the skillet. Add 2 cups of diced eggplant and 1 sliced zucchini. Stir-fry for 4 minutes until the vegetables are tender.
- 4. Return the cooked onion, garlic, mushroom, and red pepper mixture to the skillet. Stir to combine.
- 5. Add 2 diced tomatoes, 1/2 teaspoon of dried oregano, and 1/2 teaspoon of dried oregano to the skillet. Stir well to incorporate the seasonings.
- 6. Cover the skillet and let the mixture simmer for 5 minutes to allow the flavors to meld.
- 7. Season with salt and pepper to taste. Serve hot as a main dish or a side.
