Ingredients

  • 100 g Sambar Onion Peeled
  • 250 g Organically Grown Green Capsicum
  • 100 g Celery
  • 125 g White Shimeji Mushroom (Anabe)
  • 500 g Organically Grown Tomato (Hybrid) (Tamatar)
  • 1 pack (1 kg) 921 Everyday Long Grain Rice
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)

Instructions

  1. 1. Heat a large skillet or pressure cooker over medium heat and add 1 cup of sliced white shimeji mushrooms. Cook until softened, about 5-7 minutes.
  2. 2. Add 1 diced sambar onion, 1 diced green capsicum, 1 cup chopped celery, and 1 cup sliced mushrooms to the skillet. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. 3. Stir in 1/2 cup of uncooked rice and mix well with the vegetables.
  4. 4. Add 1 diced tomato and season with 1 tsp salt. Pour in 1 cup of water and stir to combine.
  5. 5. Cover the skillet or pressure cooker and cook on medium heat for 10 minutes, or until the rice is tender and the liquid is absorbed. If using a pressure cooker, cook on high until it steams, then reduce the heat and cook for 10 minutes before releasing the pressure.
  6. 6. Turn off the heat and let the dish rest for 5 minutes. Fluff the rice with a fork before serving.
  7. 7. Serve hot with a side of fruit salad and rye bread for a complete meal.
