Ingredients
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 100 g Celery
- 125 g White Shimeji Mushroom (Anabe)
- 500 g Organically Grown Tomato (Hybrid) (Tamatar)
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
Instructions
- 1. Heat a large skillet or pressure cooker over medium heat and add 1 cup of sliced white shimeji mushrooms. Cook until softened, about 5-7 minutes.
- 2. Add 1 diced sambar onion, 1 diced green capsicum, 1 cup chopped celery, and 1 cup sliced mushrooms to the skillet. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
- 3. Stir in 1/2 cup of uncooked rice and mix well with the vegetables.
- 4. Add 1 diced tomato and season with 1 tsp salt. Pour in 1 cup of water and stir to combine.
- 5. Cover the skillet or pressure cooker and cook on medium heat for 10 minutes, or until the rice is tender and the liquid is absorbed. If using a pressure cooker, cook on high until it steams, then reduce the heat and cook for 10 minutes before releasing the pressure.
- 6. Turn off the heat and let the dish rest for 5 minutes. Fluff the rice with a fork before serving.
- 7. Serve hot with a side of fruit salad and rye bread for a complete meal.
