Ingredients
- 200 g Sambar Onion Peeled (Sambar Kanda)
- 100 g Celery
- 50 g The Select Aisle Bread Crumbs
- 100 g D'Lecta Parmesan Extra Hard Cheese Block
- 250 g Zucchini Green
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 200 g Hommade Tomato Puree
Instructions
- 1. Bring a large pot of salted water to a boil. Add 2 medium zucchini and cook for 10 to 15 minutes until slightly tender. Remove and let cool.
- 2. In a skillet over medium heat, brown 1 lb ground beef until fully cooked. Drain any excess fat and set aside.
- 3. Slice the cooled zucchini lengthwise and carefully scoop out the middle, leaving a sturdy shell. Reserve the scooped-out zucchini flesh.
- 4. In a mixing bowl, combine the cooked ground beef, 1/2 cup diced onion, 1/4 cup diced celery, 1/4 cup bread crumbs, the reserved zucchini flesh, 2 tbsp grated parmesan cheese, 1 tsp salt, and 1/2 tsp pepper. Mix well.
- 5. Fill the hollowed zucchini shells with the beef mixture, pressing it down gently to pack it in.
- 6. Spoon 8 oz of tomato puree evenly over the stuffed zucchini.
- 7. Sprinkle an additional 2 tbsp of grated parmesan cheese over the top of each stuffed zucchini.
- 8. Place the stuffed zucchini on a baking sheet and bake in a preheated oven at 350°F for 30 minutes, or until the tops are golden and the filling is heated through.
- 9. Remove from the oven and let cool slightly before serving. Enjoy your savory stuffed zucchini!
