- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 250g Green Chilli
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- - Coriander Powder
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Soak the soy chunks in warm water for 10 minutes, then squeeze out excess water and set aside.
- 2. Heat vegetable oil in a pan and add cumin seeds, letting them sizzle for a few seconds.
- 3. Add finely chopped garlic, ginger, and green chili, sautéing until fragrant and golden.
- 4. Stir in diced onions and cook until they turn translucent and slightly browned.
- 5. Add chopped tomatoes and cook until softened, forming a thick base.
- 6. Mix in turmeric powder, red chili powder, coriander powder, and garam masala, cooking for 1 minute.
- 7. Add the soaked soy chunks and stir well to coat them evenly with the spices.
- 8. Toss in the spinach leaves, cooking until wilted and well combined with the soy chunks.
- 9. Adjust salt and pour in water; let simmer for 5 minutes to blend the flavors.
- 10. Serve the stir-fry hot, garnished with fresh coriander if desired.
