- - Besan
- - Rice Flour
- 50 g Cumin Powder
- - Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Salt
- 1pc Watermelon
- 200 ml Mustard Oil
Instructions
- 1. Soak the soy chunks in hot water for 10 minutes, then drain and squeeze out excess water.
- 2. Finely chop the spinach leaves and keep them aside for mixing into the batter.
- 3. Blend the soy chunks into a coarse paste using a food processor or blender.
- 4. In a mixing bowl, combine besan, rice flour, cumin powder, coriander powder, turmeric, chili powder, and salt.
- 5. Gradually add water to the dry mix, stirring to create a smooth, lump-free batter.
- 6. Fold the chopped spinach and blended soy chunks into the batter, mixing evenly.
- 7. Heat a non-stick skillet and coat it lightly with oil over medium heat.
- 8. Pour a ladleful of batter onto the skillet and spread it into a circular pancake shape.
- 9. Cook the pancake for 3-4 minutes on one side until golden brown, then flip and cook the other side.
- 10. Repeat the process with the remaining batter to make all the pancakes.
- 11. Serve the pancakes warm with your choice of chutney or yogurt for dipping.
