Ingredients
- 4.6 ltr Saffola Active Refined Cooking Oil Blend Of Rice Bran & Soyabean Oil
- 125 g Cremini Mushroom
- 250 g Organically Grown Green Capsicum
- 100 g Garlic - Single Clove
- 500 g Weikfield Cornstarch Amazingly Versatile Gluten Free
- 900 G Kikkoman Naturally Brewed Dark Soy Sauce
- 250 ml Brothsmen Tomato Basil Soup - Ready To Eat
Instructions
- 1. Heat 1 tablespoon of cooking oil in a Dutch oven or stew pot over medium-high heat. Add 1 cup of cooked quinoa and sauté until lightly toasted, about 3-4 minutes.
- 2. Once the quinoa is toasted, add 1 cup of water, 1 Knorr vegetable stock cube, and 1 tablespoon of soy sauce. Stir well and bring to a simmer. Cover and cook for about 15 minutes, or until the quinoa is tender.
- 3. Add 1 cup of sliced mushrooms, 1/2 cup of diced green pepper, and the whole clove of garlic (peeled and left intact) to the pot. Stir to combine and let simmer uncovered for another 15 minutes.
- 4. In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of warm water until smooth. Gradually add this mixture to the pot, stirring constantly, until the sauce thickens.
- 5. Serve the vegetable mixture over warm quinoa for a complete and satisfying meal.
