Ingredients
- 25 g Parsley
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 100 g Celery Stalk
- 200 g Freshcon Cooked Basmati Rice
- 500 g Organically Grown Tomato (Hybrid) (Tamatar)
- 100 g Zoff Garlic Powder
- 100 g Zoff Red Chilli Powder
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a large skillet over medium heat, sauté 1 diced onion, 1 diced green capsicum, and 3 diced celery stalks until tender, about 5-7 minutes.
- 3. Add 1 1/2 cups cooked basmati rice to the skillet and cook for 5 minutes, stirring constantly to lightly toast the rice. Remove from heat.
- 4. Stir in 1/4 tsp garlic powder, 1/4 tsp red chilli powder, 1/4 cup chopped parsley, 1 diced tomato, 1 tsp salt, and 1 bay leaf. Mix well to combine.
- 5. Transfer the mixture to a shallow baking dish. Add 1 cup water and stir gently to distribute the liquid evenly.
- 6. Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 1/2 hours, or until the rice is tender and the flavors are well combined.
- 7. Remove the bay leaf before serving. Serve hot and enjoy your savory Cajun rice bake.
