Ingredients

  • 500 g Weikfield Cornstarch Amazingly Versatile Gluten Free
  • 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
  • 2 x 170 ml Masterchow White Vinegar - Pack Of 2
  • 900 G Kikkoman Naturally Brewed Dark Soy Sauce

Instructions

  1. 1. Slice the red delicious apple and dip the slices in a mixture of 1/2 cup water and a splash of lemon juice to prevent browning. Set aside.
  2. 2. Heat 2 tablespoons of oil in a nonstick skillet over medium-high heat. Add 1 pound of chicken, cut into bite-sized pieces, and sauté until fully cooked and no longer pink, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. 3. In the same skillet, add 1 green pepper (sliced) and 1 onion (sliced). Sauté the vegetables until tender-crisp, about 4-5 minutes.
  4. 4. Return the cooked chicken to the skillet and stir to combine with the vegetables. Cook for 1 minute to heat through.
  5. 5. In a small bowl, mix 1/2 cup apple juice, 1 tablespoon white vinegar, 1 tablespoon cornstarch, and 2 teaspoons soy sauce until smooth. Pour this mixture into the skillet.
  6. 6. Add the apple slices to the skillet and cook everything together, stirring frequently, until the sauce thickens and coats the chicken and vegetables, about 2-3 minutes.
  7. 7. Serve the stir-fry hot as a complete dinner.
