Ingredients
- 250 g Organically Grown Green Capsicum
- 100 g Sambar Onion Peeled
- 200 g Laa Frozen Chicken Barbecue Topping
- 1 ltr Real Fruit Power Apple Juice 1 L
- 500 g Weikfield Cornstarch Amazingly Versatile Gluten Free
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 2 x 170 ml Masterchow White Vinegar - Pack Of 2
- 900 G Kikkoman Naturally Brewed Dark Soy Sauce
Instructions
- 1. Slice the red delicious apple and dip the slices in a mixture of 1/2 cup water and a splash of lemon juice to prevent browning. Set aside.
- 2. Heat 2 tablespoons of oil in a nonstick skillet over medium-high heat. Add 1 pound of chicken, cut into bite-sized pieces, and sauté until fully cooked and no longer pink, about 5-7 minutes. Remove the chicken from the pan and set aside.
- 3. In the same skillet, add 1 green pepper (sliced) and 1 onion (sliced). Sauté the vegetables until tender-crisp, about 4-5 minutes.
- 4. Return the cooked chicken to the skillet and stir to combine with the vegetables. Cook for 1 minute to heat through.
- 5. In a small bowl, mix 1/2 cup apple juice, 1 tablespoon white vinegar, 1 tablespoon cornstarch, and 2 teaspoons soy sauce until smooth. Pour this mixture into the skillet.
- 6. Add the apple slices to the skillet and cook everything together, stirring frequently, until the sauce thickens and coats the chicken and vegetables, about 2-3 minutes.
- 7. Serve the stir-fry hot as a complete dinner.
