Ingredients
- 250 ml Olive Oil
- 500 g Onion
- 100 g Garlic
- - Baby Tomatoes
- 1 kg Bell Peppers
- - Thyme
- 20 g Oregano
- 50 g Parsley Leaves
- 1 kg Basmati Rice
- - Vegetable Stock Cubes
- 100 g Salt
- 50 g Black Pepper
Instructions
- 1. Rinse the basmati rice under cold water until the water runs clear, then drain thoroughly.
- 2. Heat olive oil in a pan over medium heat and sauté chopped onion and minced garlic until fragrant.
- 3. Add diced tomatoes and bell peppers to the pan, cooking until they soften, about 5 minutes.
- 4. Stir in dried thyme, oregano, salt, and black pepper, letting the flavors meld for 2 minutes.
- 5. Cut tofu into cubes and add to the pan, gently mixing to coat with the Provençal sauce.
- 6. In a separate pot, bring vegetable stock to a boil and add the rinsed basmati rice.
- 7. Reduce heat, cover, and simmer the rice for 12-15 minutes until cooked through and fluffy.
- 8. Once the rice is done, stir in chopped parsley to infuse a fresh herbed aroma.
- 9. Plate the herbed rice and spoon the sautéed tofu Provençal on top for a beautiful presentation.
