- 2. Transfer the shredded cabbage to a large bowl and sprinkle with rock salt. Massage the cabbage thoroughly for 10 minutes until it starts releasing its natural juices.
- 3. Pack the cabbage tightly into a clean, sterilized glass jar, pressing down firmly so that the natural brine covers the cabbage completely.
- 4. Place a weight or small plate inside the jar to keep the cabbage submerged in the brine. Seal the jar loosely to allow gases to escape during fermentation.
- 5. Leave the jar at room temperature in a cool, dark place for 5-7 days, checking daily to ensure the cabbage remains submerged and skimming off any surface scum if necessary.
- 6. Taste the sauerkraut after 5 days; if it’s tangy to your liking, transfer it to the refrigerator to slow the fermentation process. Let it chill before serving.
