Ingredients

  • 500 G Ridge Gourd/Jhinge Tori(500Gm)
  • 1Kg Potato
  • 250 g Carrot
  • 500g French Beans
  • 20G Curry Leaves
  • 250g Green Chilli
  • - Red Chilli
  • - Mustard Seeds
  • 500 Gms Buckwheat Flour
  • 20 g Turmeric Powder
  • 50 g Cumin Powder
  • 200 ml Mustard Oil
  • 250g Coriander
  • 10G Salt

Instructions

  1. Step 1: Prepare the dumpling dough by mixing whole wheat flour, a pinch of salt, and enough water to form a soft, pliable dough. Knead and rest for 15 minutes.
  2. Step 2: Heat 1 teaspoon of mustard oil in a pan. Add mustard seeds, curry leaves, and green chili. Sauté until aromatic.
  3. Step 3: Add ridge gourd, potato, carrot, and French beans to the pan. Season with turmeric, cumin powder, and salt. Cook until the vegetables are tender. Let the mixture cool.
  4. Step 4: Roll out the dumpling dough into thin circles. Place a spoonful of the Santula filling in the center of each circle. Fold and seal the edges to create dumplings.
  5. Step 5: Steam the dumplings in a steamer for 15 minutes until fully cooked.
  6. Step 6: Prepare the tomato sauce by heating 1 teaspoon of mustard oil in a pan. Add tomato puree, red chili powder, and salt. Cook until the sauce thickens.
  7. Step 7: Serve the steamed dumplings hot with the spiced tomato sauce, garnished with fresh coriander.
