- 1 l Refined Soyabean Oil
- 100 g Garlic
- 500 g Onion
- 250 g Carrot
- 200 g Table Salt
- - Vegetable Stock Cubes
- 1 unit Celery
Instructions
- 1. Gather all ingredients: 4-5 ripe San Marzano tomatoes (or any ripe tomatoes), 1 medium onion, 2-3 garlic cloves, 1 medium carrot, 1 celery stalk, 2 cups vegetable stock, 1/4 cup fresh basil leaves, 2 tbsp olive oil, 1/2 tsp sugar (optional), salt and pepper to taste.
- 2. Wash the tomatoes thoroughly. Blanch them by boiling in water for 1-2 minutes, then transferring them to ice-cold water. Peel the skin, remove the seeds, and chop the tomatoes into small pieces. Set aside.
- 3. Peel and finely chop the onion, garlic, carrot, and celery stalk. Keep them ready.
- 4. Heat 2 tbsp olive oil in a large pot over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
- 5. Add the minced garlic, chopped carrot, and celery to the pot. Sauté for another 3-4 minutes until the vegetables soften slightly.
- 6. Add the chopped tomatoes to the pot. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and release their juices.
- 7. Pour in 2 cups of vegetable stock and stir well. Bring the mixture to a gentle boil.
- 8. Reduce the heat to low, cover the pot, and let the soup simmer for 15-20 minutes to allow the flavors to meld.
- 9. While the soup simmers, wash and roughly chop the fresh basil leaves.
- 10. After simmering, remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, let it cool slightly and blend in a regular blender in batches.
- 11. Return the blended soup to the pot. Add the chopped basil leaves, salt, pepper, and sugar (if using). Stir well and heat gently for 2-3 minutes.
- 12. Taste and adjust seasoning if needed. If the soup is too thick, add a little more vegetable stock or water to reach your desired consistency.
- 13. Serve the soup hot, garnished with a few fresh basil leaves or a drizzle of olive oil if desired. Enjoy with crusty bread or croutons.
