Saffron Mushroom and Quinoa Pilaf recipe

Ingredients

  • 100 g Quinoa
  • 500 g Onion
  • - MF GARLIC CLOVES 100GM
  • loose Ginger
  • 250g Green Chilli
  • 100 g Jeera
  • 100 g Dhaniya Powder
  • 20 g Turmeric Powder
  • 100 g Salt
  • 1pc Watermelon
  • - Coriander Powder

Instructions

  1. 1. Rinse quinoa thoroughly under running water to remove bitterness.
  2. 2. Soak saffron strands in 2 tablespoons of warm water for 5 minutes.
  3. 3. Heat oil in a heavy-bottomed pan and add cumin seeds until they sizzle.
  4. 4. Add chopped onion, garlic, ginger, and chilies, sauté until golden brown.
  5. 5. Stir in ground coriander, turmeric, and salt, cooking for 2 minutes.
  6. 6. Add sliced mushrooms and sauté until they release moisture and shrink slightly.
  7. 7. Mix in the rinsed quinoa and cook for 2 minutes, stirring occasionally.
  8. 8. Pour 400 ml of water into the pan along with the saffron water.
  9. 9. Bring the mixture to a boil, then reduce heat and cover the pan.
  10. 10. Simmer for 15 minutes until the quinoa absorbs all the liquid and becomes fluffy.
  11. 11. Turn off the heat and let the pilaf sit covered for 5 minutes.
  12. 12. Fluff the quinoa with a fork and garnish with chopped cilantro leaves.
  13. 13. Serve warm in bowls for a hearty and aromatic dinner.
