A fragrant and hearty one-pot dish combining nutty quinoa, earthy mushrooms, and aromatic saffron for a satisfying dinner.
Ingredients
- 100 g Quinoa
- 500 g Onion
- - MF GARLIC CLOVES 100GM
- loose Ginger
- 250g Green Chilli
- 100 g Jeera
- 100 g Dhaniya Powder
- 20 g Turmeric Powder
- 100 g Salt
- 1pc Watermelon
- - Coriander Powder
Instructions
- 1. Rinse quinoa thoroughly under running water to remove bitterness.
- 2. Soak saffron strands in 2 tablespoons of warm water for 5 minutes.
- 3. Heat oil in a heavy-bottomed pan and add cumin seeds until they sizzle.
- 4. Add chopped onion, garlic, ginger, and chilies, sauté until golden brown.
- 5. Stir in ground coriander, turmeric, and salt, cooking for 2 minutes.
- 6. Add sliced mushrooms and sauté until they release moisture and shrink slightly.
- 7. Mix in the rinsed quinoa and cook for 2 minutes, stirring occasionally.
- 8. Pour 400 ml of water into the pan along with the saffron water.
- 9. Bring the mixture to a boil, then reduce heat and cover the pan.
- 10. Simmer for 15 minutes until the quinoa absorbs all the liquid and becomes fluffy.
- 11. Turn off the heat and let the pilaf sit covered for 5 minutes.
- 12. Fluff the quinoa with a fork and garnish with chopped cilantro leaves.
- 13. Serve warm in bowls for a hearty and aromatic dinner.
