  • 500 g Onion
  • 300 g Ginger Paste
  • - Garlic Paste
  • 250g Green Chilli
  • 100 g Coriander Leaves
  • 50 g Cumin Powder
  • - Coriander Powder
  • 45 g Garam Masala
  • 100 g Salt
  • 20 g Turmeric Powder
  • 1 kg Rice
  • - Bay Leaf
  • - Green Cardamom Powder
  • 50 g Cloves

Instructions

  1. 1. In a mixing bowl, combine mutton mince, ginger paste, garlic paste, green chili, coriander leaves, and all dry spices.
  2. 2. Shape the mixture into small round koftas and set them aside for 10 minutes.
  3. 3. Heat oil in a pan and fry the koftas until golden brown on all sides; remove and set aside.
  4. 4. In the same pan, sauté chopped onion until golden, then add turmeric and garam masala.
  5. 5. Return the koftas to the pan and simmer for 10 minutes over low heat, turning occasionally.
  6. 6. Meanwhile, rinse the rice and soak it for 15 minutes in water.
  7. 7. Boil water with saffron strands, bay leaf, cardamom, and cloves, then add the soaked rice.
  8. 8. Cook the rice until fluffy and fragrant, ensuring the saffron blends well.
  9. 9. Plate the saffron rice and arrange the koftas over it for a beautiful presentation.
  10. 10. Garnish with extra coriander leaves and serve hot.
