A wholesome and comforting Rajasthani dish made with moong dal and rice, infused with aromatic spices for a hearty dinner.
Ingredients
- 500 g Moong Dal
- - Baby Tomatoes
- - Tomato Ketchup
- 1 kg Rice
- 20 g Turmeric Powder
- - Cumin Seeds 100g
- 250g Green Chilli
- 100 g Coriander Leaves
- 100 g Salt
- 1 kg Water Chestnuts
- 200 ml Mustard Oil
Instructions
- 1. Wash the moong dal and rice thoroughly under running water and soak them for 20 minutes.
- 2. Chop the tomatoes into small pieces and finely slice the green chili.
- 3. Heat oil in a deep pan and add cumin seeds, letting them sizzle for a few seconds.
- 4. Add chopped tomatoes and green chili to the pan, cooking for 3-4 minutes until softened.
- 5. Stir in turmeric powder and salt, mixing well with the tomato base.
- 6. Drain the soaked dal and rice, then add them to the pan, stirring to combine with the spices.
- 7. Pour in water and bring the mixture to a boil over high heat.
- 8. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes until the dal and rice are cooked through.
- 9. Stir occasionally to prevent sticking, ensuring the khichdi reaches a creamy consistency.
- 10. Garnish with freshly chopped coriander leaves before serving warm.
