- 1 ltr Real Fruit Power Pineapple Juice
- 500 g Weikfield Cornstarch Amazingly Versatile Gluten Free
- 500 g Sardar Boneless Chicken Breast
- 1 kg Whole Farm Premium Brown Rice
- 900 G Kikkoman Naturally Brewed Dark Soy Sauce
- 100 g Zoff Garlic Powder
- 750 ml Catch Clear Lemon N Lime Flavoured Water
- 500G Limgane Red Pepper Powder, Gochugaru For Seasoning 임가네 고춧가루 조미용 500G
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
Instructions
- 1. Cook 2 cups of brown rice according to package directions and set aside.
- 2. Drain 1 can of pineapple, reserving 1/4 cup of juice.
- 3. In a bowl, blend the reserved pineapple juice with 1/3 cup soy sauce, 2 tablespoons cornstarch, 3/4 teaspoon garlic powder, 1/2 cup water, and 3/4 teaspoon red pepper. Mix until smooth and set aside.
- 4. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add 500 g boneless chicken breast, cut into bite-sized pieces, and stir-fry until fully cooked and browned, about 5-7 minutes.
- 5. Add 1 packet of frozen oriental vegetable medley to the skillet and stir-fry for 3-4 minutes until heated through.
- 6. Pour the prepared pineapple-soy sauce mixture into the skillet and stir well. Cook for 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables evenly.
- 7. Add the drained pineapple chunks to the skillet and gently mix. Cook for an additional 1-2 minutes to warm the pineapple.
- 8. Serve the stir-fry over the cooked brown rice and enjoy your dinner.
