Ingredients

  • 100 g Coriander Leaves
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • - Besan
  • 450 G Jaggery
  • 200 g Table Salt
  • 50 g Asafoetida Powder
  • 100 g Red Mustard Seeds
  • - Coriander Powder
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Heat 1 tbsp of oil in a pan. Add 1/2 tsp of mustard seeds and let them splutter.
  2. 2. Add 1/2 tsp of cumin seeds and 1/4 tsp of asafoetida. Sauté for a few seconds.
  3. 3. Add 1 finely chopped onion and sauté until golden brown.
  4. 4. Add 1 finely chopped tomato and cook until it becomes soft and pulpy.
  5. 5. Add 1/2 tsp of turmeric powder, 1 tsp of red chili powder, 1 tsp of coriander powder, and salt to taste. Mix well and cook for 2 minutes.
  6. 6. Add 1 cup of chopped mixed vegetables (such as carrots, beans, and peas) and stir to coat with the spices.
  7. 7. Add 1/2 cup of water, cover the pan, and cook on medium heat until the vegetables are tender.
  8. 8. In a separate bowl, mix 1/2 cup of besan (gram flour) with 1/4 cup of water to make a smooth batter.
  9. 9. Add the besan batter to the cooked vegetables and mix well. Cook for another 5 minutes, stirring continuously, until the mixture thickens.
  10. 10. Garnish with freshly chopped coriander leaves and serve hot with roti or rice.
