Ingredients
- 200 g Paneer
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 100g Greek Yogurt
- 1 pack (100 g) Everest - Ginger Garlic Paste
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Catch Super Garam Masala
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 140 g Modern Kitchens Raita Boondi - 100 % Rice Bran Oil
- 500 g Spt Frozen Mixed Vegetables
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Cut the paneer into cubes and set aside in a mixing bowl.
- 2. In a separate bowl, mix yogurt, ginger-garlic paste, turmeric, red chili powder, coriander powder, garam masala, and salt to create the marinade.
- 3. Add the paneer cubes to the marinade and coat evenly. Let this sit for 20 minutes.
- 4. Wash the long-grain rice thoroughly and cook it in boiling water until tender. Drain and keep warm.
- 5. Heat oil in a pan and sauté the marinated paneer on medium heat until golden and slightly charred. Remove and set aside.
- 6. In the same pan, sauté the fresh mixed vegetables until tender yet crisp, adding a pinch of salt and spices as needed.
- 7. Layer the cooked rice in serving bowls and top with the sautéed vegetables and paneer tikka.
- 8. Garnish with freshly chopped coriander leaves for a vibrant finish.
