Paneer & Spinach Stuffed Millet Dosa recipe

Ingredients

  • 500 g Whole Farm Premium Kangni/Foxtail Millet - 500 G
  • - Rice Flour
  • 200 g Paneer
  • 250 g Spinach
  • 250g Green Chilli
  • 100 g Jeera
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1pc Watermelon

Instructions

  1. 1. Rinse the foxtail millet thoroughly and soak it in water for 4 hours.
  2. 2. Blend the millet with rice flour, salt, and water until smooth to make the dosa batter.
  3. 3. In a pan, heat 1 tablespoon oil and sauté cumin seeds and chopped green chilies.
  4. 4. Add finely chopped spinach to the pan and cook for 3 minutes until wilted.
  5. 5. Crumble paneer into the spinach mixture and stir well for 2 minutes. Remove from heat.
  6. 6. Heat a non-stick tawa and pour a ladle of millet batter, spreading it thinly into a dosa shape.
  7. 7. Cook the dosa on medium flame for 2 minutes until the edges lift slightly.
  8. 8. Place a spoonful of paneer-spinach filling on one side of the dosa and fold it over.
  9. 9. Press gently with a spatula to seal the dosa and cook for another 1 minute.
  10. 10. Repeat the process for the remaining batter and filling.
  11. 11. Serve hot with coconut chutney or tomato chutney for added flavor.
