A wholesome, protein-rich Odia-inspired upma made with roasted mung dal and seasonal vegetables, infused with the flavors of panch phoran and mustard oil.
Ingredients
- 500G Freshos Couscous Semolina
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- 250 g Carrot
- 200 g Green Peas
- 1 piece Coconut
- 20G Curry Leaves
- 250g Green Chilli
- 500 ml Water
- - BALAJI MUNG DAL 250GM
- 200 ml Mustard Oil
- 250g Ginger
- 20 g Turmeric Powder
- 10G Salt
Instructions
- Step 1: Dry roast the mung dal in a pan until lightly golden and aromatic. Set aside.
- Step 2: Heat mustard oil in a large pan. Add panch phoran and let it crackle.
- Step 3: Add curry leaves, slit green chili, and grated ginger to the pan. Sauté for 30 seconds.
- Step 4: Add the diced ridge gourd, drumsticks, carrots, and blanched green peas to the pan. Sprinkle turmeric powder and salt. Cook for 5 minutes.
- Step 5: Add the roasted mung dal and semolina to the vegetable mixture. Mix well.
- Step 6: Gradually pour in the boiled water while stirring continuously to avoid lumps. Cover the pan and let it simmer for 10-12 minutes.
- Step 7: Once the upma has absorbed the water and reached a soft, fluffy consistency, garnish with grated coconut and serve hot.
