- 400 g Curd
- 500 ml Water
- - Grated Coconut
- - Mustard Seeds
- 500 Gms Buckwheat Flour
- 200 ml Mustard Oil
- 250g Green Chilli
- 10G Salt
- - Red Chilli
- 250g Coriander
- 20G Curry Leaves
- 1 l Groundnut Oil
Instructions
- Step 1: Prepare the dough for the parathas by mixing whole wheat flour, drumstick leaves, mustard oil, curd, green chilies, panch phoran, salt, and enough water. Knead into a soft, pliable dough. Rest for 20 minutes.
- Step 2: Divide the dough into equal portions and roll out thin parathas using a rolling pin.
- Step 3: Preheat the air fryer to 180°C. Lightly grease the air fryer basket with mustard oil. Place each rolled paratha in the air fryer and cook for 6-7 minutes, flipping halfway through.
- Step 4: To make the tomato-coconut chutney, blend tomatoes, grated coconut, red chili powder, coriander leaves, and tamarind pulp into a smooth paste.
- Step 5: Heat groundnut oil in a small pan, add mustard seeds and curry leaves, and temper the blended chutney. Mix well and let it simmer for 1-2 minutes.
- Step 6: Serve the air-fried drumstick-methi parathas hot with the tomato-coconut chutney on the side.
