A delicious and protein-packed breakfast featuring creamy paneer and tender spinach wrapped in soft flatbreads, enhanced with a nutty sesame dressing.
Ingredients
- 200 g Paneer
- 250 g Spinach
- 50 g White Sesame Seeds
- 100 g Coriander Leaves
- 250g Green Chilli
- 250 ml Lemon Juice Concentrate
- 250 ml Olive Oil
- 100 g Salt
- 50 g Black Pepper
Instructions
- 1. Wash and finely chop the spinach and coriander leaves, then set them aside.
- 2. Grate the paneer into small shreds and keep it ready for the filling.
- 3. Dry roast the sesame seeds in a pan until golden, then grind them into a coarse paste using a mortar and pestle.
- 4. Heat olive oil in a pan and sauté the garlic and green chilies for 1-2 minutes until fragrant.
- 5. Add the chopped spinach, coriander, salt, and black pepper to the pan, cooking until the spinach wilts.
- 6. Stir in the grated paneer and cook for 3-4 minutes, blending well with the spinach mixture.
- 7. Mix the sesame paste with lemon juice and a pinch of salt to create the nutty dressing.
- 8. Warm the rice flour flatbreads on a skillet for 30 seconds each side.
- 9. Place the paneer and spinach mixture onto each flatbread, spreading evenly.
- 10. Drizzle the sesame dressing over the filling and fold the flatbreads into wraps.
- 11. Serve the wraps warm, garnished with additional sesame seeds if desired.
