Ingredients
- - Rice Flour
- 500 g Urad Dal
- 500 g Onion
- - Tomato Ketchup
- 250g Green Chilli
- 100 g Curry Leaves
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Salt
- 100 g Jeera
- 200 ml Mustard Oil
- - Coriander Powder
- 1pc Watermelon
Instructions
- 1. Wash and soak urad dal in water for 4 hours, then grind into a smooth paste.
- 2. Mix the urad dal paste with rice flour, water, and 1 tsp salt to form a thick batter. Let it ferment overnight.
- 3. Heat oil in a pan and sauté cumin seeds until aromatic, then add curry leaves, onions, and green chilies.
- 4. Add ginger-garlic paste and cook until the raw aroma fades, then mix in turmeric and red chili powder.
- 5. Stir in mutton keema and cook until the meat changes color, then add tomatoes and cook until soft.
- 6. Season the keema mixture with 1/2 tsp salt and cook until the mixture is dry and well combined.
- 7. Heat a non-stick tawa and pour a ladle of the fermented batter, spreading it into a thick circle.
- 8. Sprinkle the cooked mutton keema masala evenly over the uttapam and press lightly with a spatula.
- 9. Drizzle a little oil around the edges and cook until the base is golden and crisp.
- 10. Flip the uttapam carefully and cook the other side for 1-2 minutes until done.
- 11. Garnish with chopped coriander leaves before serving hot.
