Ingredients

  • - Rice Flour
  • 500 g Urad Dal
  • 500 g Onion
  • - Tomato Ketchup
  • 250g Green Chilli
  • 100 g Curry Leaves
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Salt
  • 100 g Jeera
  • 200 ml Mustard Oil
  • - Coriander Powder
  • 1pc Watermelon

Instructions

  1. 1. Wash and soak urad dal in water for 4 hours, then grind into a smooth paste.
  2. 2. Mix the urad dal paste with rice flour, water, and 1 tsp salt to form a thick batter. Let it ferment overnight.
  3. 3. Heat oil in a pan and sauté cumin seeds until aromatic, then add curry leaves, onions, and green chilies.
  4. 4. Add ginger-garlic paste and cook until the raw aroma fades, then mix in turmeric and red chili powder.
  5. 5. Stir in mutton keema and cook until the meat changes color, then add tomatoes and cook until soft.
  6. 6. Season the keema mixture with 1/2 tsp salt and cook until the mixture is dry and well combined.
  7. 7. Heat a non-stick tawa and pour a ladle of the fermented batter, spreading it into a thick circle.
  8. 8. Sprinkle the cooked mutton keema masala evenly over the uttapam and press lightly with a spatula.
  9. 9. Drizzle a little oil around the edges and cook until the base is golden and crisp.
  10. 10. Flip the uttapam carefully and cook the other side for 1-2 minutes until done.
  11. 11. Garnish with chopped coriander leaves before serving hot.
