Frequently asked questions
- How can I adjust the spice level in this recipe?
- To reduce the heat, use fewer green chilies or remove their seeds before chopping. If you prefer more spice, increase the amount of green chilies or use a hotter variety. Balancing the spice with the richness of the coconut cream is key.
- What is the role of mint leaves in this dish?
- Mint leaves provide a refreshing and aromatic flavor that balances the richness of the coconut cream and the heat of the green chilies. They are essential for achieving the dish's signature flavor profile and should be used fresh for the best results.
- How do I know when the sauce has reduced properly?
- The sauce is ready when it thickens slightly and coats the back of a spoon. Avoid over-reducing, as this can make the sauce too thick and overpower the delicate flavors of the peas.
- Can I use frozen peas instead of fresh peas for this recipe?
- Yes, frozen peas can be used as a convenient alternative to fresh peas. Simply add them to the boiling water and cook until they are tender but not mushy, ensuring they retain their vibrant color and texture.
