Ingredients

  • 25 g Parsley
  • 50 g The Select Aisle Bread Crumbs
  • 1 ltr Real Fruit Power Tomato Juice
  • 6 pcs Licious Brown Eggs
  • 100 g Garlic - Single Clove
  • 100 g Sambar Onion Peeled
  • 200 g Orange Carrot (Gajar)
  • 125 g Red Bell Pepper
  • 250 g Zucchini Green
  • 75 Nos Oregano Sachet
  • 1 kg Tata Plus Iron Health, Double Fortified Salt
  • 1 pack (100 g) Tata Sampann Pure Black Pepper Powder

Instructions

  1. 1. In a large bowl, combine 3/4 cup bread crumbs, 1/2 cup tomato juice, 2 eggs, 1 tsp oregano, 4 minced garlic cloves, 1 1/2 tsp salt, and 1/2 tsp pepper. Mix until well combined.
  2. 2. Shape the mixture into 2-inch balls and set aside.
  3. 3. Place 3 sliced onions, 3 chopped carrots, and 1/2 cup diced red bell pepper at the bottom of a slow cooker.
  4. 4. Heat a skillet over medium heat and brown the balls on all sides. Once browned, arrange them over the vegetables in the slow cooker.
  5. 5. Cover and cook on low for 4 to 6 hours, allowing the flavors to meld and the balls to cook through.
  6. 6. Turn the slow cooker to high, add 200 g sliced zucchini and 3 tbsp chopped parsley, and cook for an additional 40 minutes.
  7. 7. Serve the braised vegetable balls and vegetables hot, garnished with extra parsley if desired.
