Ingredients
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 100 g Sambar Onion Peeled
- 125 g Red Bell Pepper
- 100 g Celery
- 100 g Garlic - Single Clove
- 5Ltr Vittorio Pomace Olive Oil
- 1 pack (200 g) Akshayakalpa Organic Artisanal Mild Cheddar Cheese 200 Gms
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 450 g American Garden Green Pitted Olives
- 473 ml Bragg Apple Cider Vinegar
Instructions
- 1. Cook 1 cup of rice according to package instructions and set aside.
- 2. While the rice is cooking, finely chop 1/2 cup onion, 1/2 cup red bell pepper, and 1/2 cup celery.
- 3. Heat 1 tablespoon olive oil in a large pan over medium heat. Add the chopped onion, red bell pepper, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and slightly browned.
- 4. Reduce the heat to low and stir in 1 can of chickpeas (drained), 1/2 cup sliced green olives, 2 tablespoons apple cider vinegar, 1 tablespoon olive oil, and 2 teaspoons garlic finely grated using a microplane or crushed with a garlic press. Cook for 5 minutes, stirring gently to combine.
- 5. Add the cooked rice to the pan along with 1 tablespoon olive oil and 1 tablespoon apple cider vinegar. Mix well to combine all the flavors.
- 6. Taste and adjust the seasoning with additional olive oil or apple cider vinegar if desired.
- 7. Optional: Transfer the mixture to a casserole dish and top with shredded halal-certified cheese. Melt the cheese in the microwave or oven until bubbly.
