Ingredients

  • 1 pack (1 kg) 921 Everyday Long Grain Rice
  • 100 g Sambar Onion Peeled
  • 125 g Red Bell Pepper
  • 100 g Celery
  • 100 g Garlic - Single Clove
  • 5Ltr Vittorio Pomace Olive Oil
  • 1 pack (200 g) Akshayakalpa Organic Artisanal Mild Cheddar Cheese 200 Gms
  • 400G Chtoura Foods Boiled Chickpeas In Brine
  • 450 g American Garden Green Pitted Olives
  • 473 ml Bragg Apple Cider Vinegar

Instructions

  1. 1. Cook 1 cup of rice according to package instructions and set aside.
  2. 2. While the rice is cooking, finely chop 1/2 cup onion, 1/2 cup red bell pepper, and 1/2 cup celery.
  3. 3. Heat 1 tablespoon olive oil in a large pan over medium heat. Add the chopped onion, red bell pepper, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and slightly browned.
  4. 4. Reduce the heat to low and stir in 1 can of chickpeas (drained), 1/2 cup sliced green olives, 2 tablespoons apple cider vinegar, 1 tablespoon olive oil, and 2 teaspoons garlic finely grated using a microplane or crushed with a garlic press. Cook for 5 minutes, stirring gently to combine.
  5. 5. Add the cooked rice to the pan along with 1 tablespoon olive oil and 1 tablespoon apple cider vinegar. Mix well to combine all the flavors.
  6. 6. Taste and adjust the seasoning with additional olive oil or apple cider vinegar if desired.
  7. 7. Optional: Transfer the mixture to a casserole dish and top with shredded halal-certified cheese. Melt the cheese in the microwave or oven until bubbly.
