Ingredients
- 100 g Garlic - Single Clove
- 125 g Red Bell Pepper (Lal Shimla Mirchi)
- 1 ltr Bertolli Extra Virgin Olive Oil
- 100 g Celery Stalk
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 75 Nos Oregano Sachet
- 425 g Bambino Pep Elbows Macaroni
- 200 g Lemon (Limbu)
- 200 g Cherry Tomatoes
- 100 g Catch Sprinklers - Iodized Table Salt
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 100 g X 3 Mtr Coriander Powder Combo
Instructions
- 1. In a food processor, combine 1 cup cherry tomatoes, 1 clove garlic, and 1 red bell pepper. Pulse until the mixture is slightly chunky.
- 2. Heat a large frying pan over medium heat and add 2 tablespoons olive oil. Add the tomato mixture and sauté for 5 minutes.
- 3. Add 2 stalks celery (chopped) to the pan and cook for another 3 minutes, stirring occasionally.
- 4. Add 29 oz drained chickpeas, 1 teaspoon iodized table salt, 1 teaspoon black pepper powder, 1 teaspoon oregano, and 1/2 teaspoon ground cumin. Simmer for 10 minutes.
- 5. Cook 1 cup elbows macaroni according to package instructions. Drain and toss with 1 tablespoon olive oil in a large bowl.
- 6. Add the chickpea and tomato mixture to the macaroni. Squeeze the juice of 1/2 lemon over the dish and toss well.
- 7. Serve warm, garnished with a drizzle of olive oil if desired.
