Ingredients
- 2 x 400 g Good To Go Boneless Chicken Breast - Pack Of 2
- 1 kg Whole Farm Premium Brown Rice
- 2 ltr Figaro Extra Light Olive Oil
- 100 g Garlic - Single Clove
- 450 g Figaro Black Sliced Olives
- 50 g + 30 g Snapin Oregano Seasoning + Chilli Flakes Combo
- 250 g D'Lecta Feta
- 400 g Pastazara Finely Chopped Tomatoes
- 1 ltr Kinley Packaged Water
Instructions
- 1. Wash hands thoroughly. Rinse the frozen chicken breasts under cool water for 1 to 2 minutes to remove the protective ice glaze. Wash hands again.
- 2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes per side, or until fully cooked and golden brown. Remove from the skillet and set aside.
- 3. In the same skillet, add 1 teaspoon of minced garlic and sauté for 1 minute until fragrant. Add 2 cups of brown rice and stir to coat with the garlic and oil.
- 4. Pour in 1 1/2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for 35-40 minutes, or until the rice is tender and the water is absorbed.
- 5. While the rice is cooking, dice the cooked chicken into bite-sized pieces. Chop 2 tomatoes and chop 2 tablespoons of olives.
- 6. Once the rice is done, stir in the diced chicken, chopped tomatoes, olives, and 1/2 teaspoon of dried oregano. Cook for an additional 2-3 minutes to heat through.
- 7. Serve the chicken and rice mixture in bowls, topped with crumbled feta cheese. Enjoy your Mediterranean-inspired dinner!
