Ingredients
- 1 Kg Pomfret Fish
- 25 g Ginger Garlic Paste
- 250 ml Lemon Juice Concentrate
- 100 g Curry Leaves
- 100 g Lemon
- 1 kg Rice
- 20 g Turmeric Powder
- - Red Chilli
- - Coriander Powder
- 100 g Yellow Mustard Seeds
- 250g Green Chilli
- 200 ml Mustard Oil
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Wash and pat dry the pomfret fish, then score its surface lightly for better marinade absorption.
- 2. Prepare a marinade by mixing turmeric, red chili powder, coriander powder, ginger garlic paste, lemon juice, and salt.
- 3. Rub the marinade evenly over the fish and let it rest for 20 minutes.
- 4. Cook the rice in boiling water with a pinch of turmeric and salt until tender, then drain and set aside.
- 5. Heat oil in a pan and add mustard seeds; let them splutter before adding curry leaves and chopped green chilies.
- 6. Stir-fry the spices until aromatic, then mix in the cooked rice and adjust salt as needed.
- 7. Heat a grill pan and brush it lightly with oil to prevent sticking.
- 8. Place the marinated fish on the grill and cook for 5-7 minutes on each side until golden and cooked through.
- 9. Plate the grilled fish alongside the lemon rice, ensuring an even presentation.
- 10. Garnish with fresh curry leaves and a wedge of lemon before serving.
