Ingredients

  • 250g Garlic
  • 250g Ginger
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Coriander Powder
  • 100g Garam Masala
  • 200 ml Mustard Oil
  • 10G Salt
  • 250g Coriander
  • NaN Red Jowar Flour
  • 500 ml Water

Instructions

  1. Step 1: Boil 4 eggs in a saucepan with water for 10 minutes. Once boiled, transfer the eggs to cold water to cool. Peel the shells and set the eggs aside.
  2. Step 2: Heat 2 tablespoons of mustard oil in a heavy-bottomed pan over medium heat until it begins to shimmer. Add 0.5 tsp cumin seeds and let them splutter for 30 seconds. Then add finely chopped onions (150g) and sauté for 5-7 minutes until golden brown.
  3. Step 3: Add minced garlic (6 cloves), grated ginger (1 inch), and chopped green chilies (2 pieces) to the pan. Cook for 2 minutes until the raw smell disappears. Add chopped tomatoes (200g) and cook for 7-8 minutes, stirring occasionally, until the tomatoes become soft and the oil separates.
  4. Step 4: Mix in 0.5 tsp turmeric powder, 0.5 tsp red chili powder, 1 tsp coriander powder, and 0.5 tsp garam masala. Stir well and cook the spices for 2 minutes. Add 100 ml water, stir, and bring the mixture to a simmer.
  5. Step 5: Gently make slits in the boiled eggs and add them to the gravy. Combine well, cover, and simmer on low heat for 10 minutes, allowing the eggs to absorb the flavors. Garnish with freshly chopped coriander leaves (10g).
  6. Step 6: For the jowar roti, knead 200g jowar flour with warm water (approx. 100 ml) until a smooth dough forms. Divide the dough into small balls, roll them out into thin circles, and cook on a hot tawa over medium heat for 2 minutes on each side until lightly browned and cooked through.
